A complete recipe for simple, aromatic, and incredibly delicious date halva:
Date Halva
Ingredients:
| No. | Ingredient | Required Amount |
|---|---|---|
| 1 | Pitted Mazafati or Khasouei Carnila dates | 250 g |
| 2 | White or wheat flour | 1 cup |
| 3 | Butter or oil | 100 g |
| 4 | Water or milk | ½ cup |
| 5 | Cardamom powder | ½ tsp |
| 6 | Cinnamon | 1 tsp |
| 7 | Brewed saffron (optional) | 1 tbsp |
| 8 | Walnuts or slivered almonds for garnish (optional) | As desired |
Instructions:
1. Preparing the dates
Chop the Mazafati or Khasouei Carnila dates and warm them with half a cup of water or milk over low heat for about 5 minutes until softened. Then mash them with a fork or blend them into a smooth paste.
2. Roasting the flour
Pour the flour into a dry pan and place it over low heat. Stir continuously. Roast for about 10 to 15 minutes until it turns a caramel-tinted golden color and the raw smell of the flour disappears.
3. Adding the butter
Add the butter or oil to the flour and mix well until you get a smooth, dough-like mixture.
4. Adding the dates
Add the mashed dates and stir thoroughly so they combine completely with the flour.
5. Adding the flavorings
Once the mixture is uniform, add the cardamom powder, cinnamon, and saffron. Sauté for a few minutes to allow the flavors to release fully.
6. Finalizing the halva
When the halva thickens and pulls away from the sides of the pan, it is ready to serve. Transfer it to a suitable dish and decorate the top with dates, walnuts, slivered almonds, and a sprinkle of cinnamon or cardamom.
Important Notes:
- If you prefer a softer texture, you can add a little extra milk.
- For a more aromatic and luxurious flavor, you may add a bit of rosewater at the end.
- If you like it sweeter, adding a teaspoon of honey is recommended.
